Three Bean Salad

2, 15 oz cans garbanzo beans (drained and rinsed)

1, 15 oz can kidney beans (drained and rinsed)

1, 15 oz can black beans (drained and rinsed)

1/2 red onion, finely chopped

1/2 cup grape tomatoes, halved 


1/3 cup olive oil

1/3 cup apple cider vinegar

1 tablespoon granulated sugar

1 tablespoon salt

1/2 tablespoon black pepper

After draining and rinsing all beans, combine in medium bowl and set aside. In separate bowl, whisk all dressing ingredients together. Add chopped onions and grape tomatoes to bean mixture and stir in dressing until well combined.  Makes about 8-10 cups.

  • Sodium: 792 mg**

**Not a low sodium food

Special Note: This dressing would also be great for green salads as it is a more healthFUL option than cream dressings, such as range and blue cheese.
